We pick all the grapes using small crates to ensure the fruit reaches the cellar in perfect condition. Each parcel is vinified separately in small stainless steel tanks before undergoing malolactic fermentation in French oak barrels (using new oak for the top range wines). To date we have used 225l barriques and some 500l barrels, but we are also experimenting with larger more traditional oak containers.
